Cheesy Pull-Apart Sliders (2-Ways)

Cheesy…Saucy…Impossible to resist!
 These aren’t your average sliders, they’re messy, cheesy, perfect little bombs of flavor, and they come in not one, but two irresistible versions! Think juicy patties with Big Mac-style sauce on pillowy buns, and saucy BBQ chicken topped with a melty, spicy cheese mix.
Make them ahead, pop them in the oven or BBQ, and watch them disappear.
Bonus: You can go full meat-lovers or skip the protein and go all cheese, all the way.

Ingredients

  • 12 mini slider buns, (I like PC mini Brioche buns or Hawaiian)(double the amount if making both types of sliders)

Cheese Mixture:

  • 3 medium green onions, finely chopped
  • 1 jalapeño, minced – seeds discarded
  • 1 ½ cup Mozzarella cheese, shredded
  • ¾ cup Cheddar cheese, shredded
  • 1/2 cup mayonnaise
  • 1/2 tsp kosher salt

Burger Fillings:

  • 1 lb ground chicken or beef
  • 2 tsp Worcestershire sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • To taste salt
  • To taste sliced pickles

Big Mac-Style Sauce:

  • 1/2 cup mayonnaise
  • 2 tbsp ketchup
  • 1 tbsp relish
  • 1 tsp yellow mustard

Chicken Filling:

  • 2 cooked rotisserie chicken breasts + some brown meat from the thigh, chopped
  • 1/2 cup chicken & ribs BBQ sauce, (I love Bull’s-Eye)

Garlic Butter Bun Topping:

  • 2-3 cloves garlic, crushed & minced
  • 1/4 cup salted butter, softened
  • To taste fresh parsley, finely chopped
  • 2 tbsp sesame seeds

Instructions

  • Preheat BBQ/Oven to 400℉.
  • In a large bowl combine all cheese mixture ingredients and set aside.
  • In a small bowl combine: butter, parsley and garlic. Set aside.
  • In a small bowl combine ingredients for the Big Mac-style sauce and set aside.

Ground Meat Burger – 1st way:

  • Lightly oil a frying pan and sauté your ground meat with the Worcestershire sauce, salt, onion and garlic powder.
  • Halve your mini slider buns and place all bottom buns on 2-way foil lined with parchment.
  • Press on the bottom buns, half the cheese mix and then top with cooked ground meat, gently pressing it down.
  • Add a thin layer of Big Mac sauce, top with pickles and place the top bun on top.
  • Spread the garlic butter mixture on the top bun and sprinkle with sesame seeds.
  • Add foil on top and enclose the sliders, creating a parcel.
  • Cook in the oven or BBQ for 10-15 mins. Remove top foil and brown the tops (5 mins).

BBQ Chicken Burger – 2nd way:

  • Combine rotisserie chicken with some BBQ sauce.
  • Press the cheese into the bottom buns of sliders and top with the chicken mixture.
  • Drizzle BBQ sauce over top and add pickles if you like.
  • Add bun top and warm in the oven or BBQ for 5 minutes.

Notes

  • You will need 1/2 the cheese mixture for the beef  &  1/2 for the chicken. If making all-cheese buns, then use only cheese mixture + your choice of sauce.
  • Prep ahead both sliders and refrigerate until you need them!
